Poke Bowl

If your first choice on busy weeknights is to pick up your favorite poke bowl, good news! You can skip running out—these bowls are surprisingly easy to make at home. With SeasTheDay Sushi Grade Tuna, a variety of colorful veggies and soft steamed rice, these healthy bowls are only limited to your imagination.

Ingredients:

  1. SeasTheDay Yellow Fin Tuna Loin, cut into bite-size pieces (500 g)
  2. 1/4 c. low-sodium soy sauce
  3. 2 tsp. rice vinegar
  4. 2 tsp. sesame oil
  5. 1 tsp. freshly grated ginger
  6. Pinch of crushed red pepper flakes
  7. 2 green onions, thinly sliced, plus more for garnish
  8. 1 tsp. toasted sesame seeds, plus more for garnish

For Serving:

  1. Sliced avocado
  2. Sliced cucumber
  3. Edamame 
  4. Shredded carrots
  5. Sliced radish
  6. Cooked white or brown rice

Directions:

  1. In a large bowl, whisk together soy sauce, rice vinegar, sesame oil, ginger, red pepper flakes, green onions, and sesame seeds. Add tuna and toss to coat. Refrigerate for at least 15 minutes or up to 1 hour.
  2. To serve, add rice to the bottom of four bowls. Top with tuna and toppings of your choice. Garnish with green onions and sesame seeds before serving.
